People with celiac disease, a digestive disease that damages the small intestine and interferes with the absorption  of nutrients from food,  are unable to handle gluten, a protein commonly found in wheat, barley and rye. While it is currently estimated that one in every 133 people suffers from the disease, new research from the Mayo Clinic has found that the number of people living with the disease is four times higher than it was in 1950.

“With increased public awareness and rising celiac diagnoses, it’s important that we have food manufacturers who can offer gluten- free foods to their customers as well as restaurants that can ensure that there are safeguards in place for those who have to live a gluten- free lifestyle,” Marek continues.
